Nitec in Services - Pastry and Baking (Part-Time)

  

About this Course

This course is to provide students with the skills and knowledge to produce a range of breads, pastries, cakes and other dessert specialties in accordance with given recipes using the appropriate method and equipment.

Course Structure

Module

Introduction to Baking Science

  • Students are trained to process and store basic baking ingredients

Pastry Basics 

  • Students are trained to prepare a specified range of different types of pastry products. They will also learn how to prepare, evaluate and store pastry fillings.

Cake Mixing and Baking

  • Students are trained to prepare, decorate and display different types of cakes.

Bread Production

  • Students are trained to prepare different types of bread products.

Desserts and Petit Fours

  • Students are trained to prepare a specified range of desserts and petit fours. They will also learn how to assemble and evaluate desserts.

Decorative Work

  • Students are trained to perform decorative work using principles of good cake design and hands-on display techniques.

Credit for Certification

Total of 24 credits from successful completion of 6 modules.

Entry Requirements

  • 2 GCE 'O' Level Grades (Grade 1 - 8) in any two subjects; or
  • 3 GCE 'N' Level Passes (Grade A-D or Grade 1-5) in English Language and two other subjects.
  • WDA's Workplace Literacy & Numeracy (WPLN) Level 5 in Speaking and Listening and Level 4 in Reading and Writing.

Applicants must pass an interview and medical check-up for admission.

Note:

1) The training schedule of lessons is subject to change.

2) Depending on demand, not all the modules in the CET Nitec in Services courses will be offered in each intake. Where the modules are offered and there is insufficient enrolment, the classes will be cancelled and a full refund will be given to the affected students.

Training Schedule

Evening classes – Lessons are held two evenings a week, from 1845 hours to 2145 hours.

Weekend classes – Lessons are held once a week, from 0900 hours to 1600 hour.
